Steaming cooks food over boiling water in a covered pan, without the food touching the water. This is the healthiest method: water-soluble vitamins (B and C) are retained because there is no leaching into cooking water, no fat is added, and the food's natural flavour, colour, and texture are preserved. Steaming is ideal for vegetables, fish, and dumplings. However, steaming does not produce browning or crispness, as the temperature does not exceed 100°C and no Maillard reaction occurs. Grilling cooks food under or over direct heat. Fat drains away from the food as it cooks, reducing the overall fat content compared to frying, and no additional oil is needed. Grilling creates browning and flavour through the Maillard reaction and gives a charred, smoky taste. It is well-suited to meat, fish, and some vegetables. However, very high temperatures can produce potentially harmful compounds (heterocyclic amines) in charred meat, so grilling should be done carefully and not to excess. Deep frying submerges food in hot oil (160–190°C), cooking it quickly and creating a crisp, golden exterior through the Maillard reaction. However, deep frying significantly increases the fat and calorie content of food as oil is absorbed during cooking. It is the least healthy of the three methods and is associated with increased risk of heart disease and obesity if consumed frequently. In summary, steaming is the most nutritious (retains vitamins, no added fat), grilling is a good compromise (fat drains away, browning achieved), and deep frying is the least healthy (adds significant fat and calories).
