✗ You can put hot food straight in the fridge. ✓ Hot food should be cooled as quickly as possible (within 90 minutes) before being placed in the fridge, to avoid raising the fridge temperature.
✗ Rinsing raw chicken removes bacteria and makes it safe. ✓ Rinsing raw chicken spreads bacteria around the sink and work surfaces through water splashing, increasing the risk of cross-contamination. Cooking is the only way to kill the bacteria.

Explain the 4 Cs of food safety and how each one helps prevent food poisoning. (8 marks)
The 4 Cs of food safety are Cross-contamination prevention, Cleaning, Chilling, and Cooking. Cross-contamination prevention involves keeping raw and ready-to-eat foods separate: using colour-coded chopping boards (e.g. red for raw meat), storing raw meat on the bottom fridge shelf so juices cannot drip onto other foods, and washing hands thoroughly after handling raw foods. This prevents harmful bacteria transferring from contaminated to safe food. Cleaning means washing and disinfecting all surfaces, utensils, and equipment before and after food preparation, as well as maintaining personal hygiene — washing hands with soap and warm water for at least 20 seconds, wearing clean aprons, and covering cuts with blue waterproof plasters. This removes bacteria from surfaces and hands, reducing the risk of transfer. Chilling means keeping perishable food below 5°C in the fridge (or −18°C in the freezer) to slow or stop bacterial multiplication, and following the 90-minute rule so food does not remain in the danger zone (5–63°C) for extended periods. Cooking means heating food to a core temperature of at least 75°C, checked with a food thermometer, to kill most harmful bacteria. Together, the 4 Cs address each stage where food safety can be compromised and form the foundation of safe food practice.
